Yamagawa in Ibusuki City is famous for katsuobushi (bonito flakes), providing 70% of the national share for the whole of Japan, especially honkarebushi. It is a specialty nurtured by encounters that can only be had in a port town. Ibusuki katsuobushi, said to be the core of Japanese cuisine and dashi culture, is today spreading from Japan across the whole world. After touring the production plant and the large freezers keeping the katsuobushi at minus 50, you will get to experience making honkarebushi and chabushi yourself. This is a chance to experience the genuine flavor of katsuobushi.
